Coming from the Emile Pernot distillery, the Authentique is an authentic absinthe, that was developed by Dominique Rousselet, Emile Pernot's stillmaster. Absinthe Authentique is a young, fresh and with more powerful than usual wormwood notes.

Colour: A clear, lively green.

Nose: Hints of Pontarlier wormwood merge nicely with anise and fennel.

Louche: The Authentique develops a lovely bright, white-green louche, which is neither too thick, not too thin.

Taste: The anise and fennel combined with the wormwood lead to a wonderfully rounded mouthfeel and balanced taste.

Finish: Refreshing!
Dominique Roussele was born and raised in La Cluse et Mijoux, the same village where the distillery is located.
Les fils d’Emile Pernot distillery was founded in 1890 in Pontarlier, France, by Emile Pernot. In 1910, the distillery produced approximately 450 hectolitres, which is not surprising: around the time, consumption of absinthe was reaching levels never heard of before.

In 1915, when La Fée Verte (The Green Fairy) was banned, the distillery turned its hand to other spirits: aniseed aperitifs, fruit brandies and gentian liqueurs.

In 2001, the small distillery started to reproduce absinthe again, with Un Emile, from an old family recipe.

In 2005, the distillery was sold to François Thevenin, who has since developed the firm with a touch of modernity alongside traditional methods.

A year later, at the end of 2006, François Thevenin bought the Klainguer distillery, also situated in Pontarlier, and formed the Pernot – Klainguer distillery.
- At first, enjoy a glass of Absinthe Authentique with half a piece of sugar. For the next, add more or less according to taste.

- For one measure of absinthe (3cl), add 2 to 5 measures of fresh water.

A good one, but not exceptional. Bitterness is not too strong (I like bitterness, strong wormwood taste), but still full of flavours, a bit sweet aftertaste.

So this is the first absinthe i am enjoying & might I say it is exquisite. the nose is well balanced with anise & has a strong but not overpowering wormwood taste. very refreshing finish that lingers a flavor of unsweetened liquorish on the tongue. I start to feel the effect very quickly with the first glass so do be aware. I give this Absinthe a thumbs up.

Delicately flavoured and beautifully balanced, Authentique is a must have for any collection. A rather feminine absinthe but one to be enjoyed by everyone.
Well scented with a pleasing louche and lasting taste, it is perfectly mixed at 3:1. Personally, I feel no sugar is required.
Well priced for the undeniable quality Authentique is.
