Absinthe Brevans: Austin Osman Spare is the second absinthe in the Brevans series, developed in collaboration between absintheur Markus Lion and distiller Oliver Matter.

Absinthe Brevans A.O.Spare is slightly adjusted both to suit the stills used at the Matter-Luginbühl distillery and for natural variation in herbs from month to month - this absinthe is a completely natural drink not containing any artificial colours or ingredients. In fact, most of the herbs used have been cultivated to eco standards.
Austin Osman Spare was an English artist, and a visionary. In his time hailed as a new Aubrey Beardsley, he was alive and producing art during one of the most exiting periods, 1886-1956, in the midst of the fundamental change in art as in the wider world. Renowned for his fascination with the occult, Austin Osman Spare worked its themes heavily into his artwork. His contact with Aleister Crowley may have influenced his ideas.
Absinthe Brevans A.O.Spare won Gold Medal and Best in Class at the 2009 International Wine & Spirits competition in London.

The label of Absinthe Brevans A.O. Spare is actually a painting by the artist himself, from 1946 and titled "Astral Body and Ghost."
Many of the old manuals on the subject of distilling - and particularly distillers individual notes - contained small errors which appear designed to
throw off potential distillers. Quite why is unsure, although in the case of commercial distillers' notes, it would make sense to avoid helping competitors.
The legalisation of absinthe in Switzerland enabled Markus Lion to join Oliver Matter in the production of the Duplais absinthes. Duplais Verte was produced first in July 2005, followed by Duplais Blanche in September of that same year, and Duplais Balance one year later.
Markus Lion followed the Duplais series with the Brevans series, based on recipes from the vintage distilling manual by J. de Brevans.

Absinthe Brevans Austin Osman Spare with half a piece of sugar. Then adjust the amount of sugar according to your taste.
- Slowly drip 2 to 5 measures of chilled water into one measure of absinthe (3cl), over sugar if desired.
