Absinthe Cocktail: “Green Fairy”

Which name sounds more suitable for an absinthe cocktail, than „green fairy“? Amazing.

 

Here is what you need and how to make it:

3cl absinthe (why not use Absinthe La Coquette?)

3cl water

2 bar spoons of egg white

1 dash of Angostura bitters

1 lemon

Squeeze the lemon and let the juice drip into your cocktail shaker. Add all the other ingredients, and some ice cubes. Shake it well, and slowly pour it into your cocktail glass through a dripper, so the lemon bits won’t drop into your glass.
