Enigma Verte FDC (fût de chêne) is made using wine alcohol and stored in oak barrels. For the storage in barrels, the Devoille distillery chose Tronçais oak barrels from the Allier Département (region) of France. In these 300 litre barrels, the absinthe ages for a very specific period of time. The exact ageing period is a closely guarded secret and is the result of many tests aiming at finding the optimal storing time. The Tronçais barrels, usually used to store Cognac or Bordeaux wines, give this absinthe a particular finish. Through ageing in oak barrels, aromas of vanilla and caramel develop. In terms of taste, wormwood and anise are in the foreground. The herbal notes are lighter and more harmonious than in the Enigma Verte. The alcohol content of 69.2% is lower than in the Absinthe Enigma Verte. This is due to the Angels' Share – the part that is lost due to evaporation during the ageing process. A creamy and complex absinthe that evokes absinthe from pre-prohibition times. Only 9 bottles available – first come, first served.

der beste aus drei Enigmas

Hallo, ich möchte heute gern den Enigma Verte – OAK AGED – bewerten. Den „normalen“ Verte kenne ich ebenso wie den Blanche.



Optisch sind alle 3 sehr ähnlich. Die Vertes haben ein Grün-goldenes Etikett, der Blanche rot/weiß.



Geschmacklich werde ich nur auf die beiden Vertes eingehen, ich koste beide parallel, wenngleich ich nur den Oka-Aged bewerte.



Farblich der Oak-Aged ein tiefes, satte Grün. Ein tick grüner als sein normaler Bruder, könnte aber auch mit der Charge zusammenhängen.



Geruch auch der Oak-Aged sehr scharf, leicht blumig, etwas weniger streng und torfig. Allerdings steht der normale Verte – womit ich jetzt vergleiche – schon eine Weile rum. Also bitte den Vergleich nicht auf die Goldwaage legen. Der Oka-aged gefällt mir besser, etwas frischer.



Man kann Den Oak-Aged pur trinken und schafft es einige Facetten ausfindig zu machen. Ist aber ein grenzwertiges Vergnügen. Es bleibt bitter im späten Nachgeschmack, kurz nach dem Abschlucken ist er sehr frisch von Fenchel und Anis geprägt. Nach einiger Zeit bleibt ein freudiges Bitzeln auf der Zunge zurück und ein leicht bitterer Hauch.



Geschmacklich unterscheiden Sie sich bis hierher nicht.



Ok, der Louche ist beim Oak schöner und langsamer. Wirklich sehr schön im Bubble-Glas zu sehen die öligen Schlieren. Was hier besonders ausgeprägt ist, ist die „Schwere“. Unten um Reservoir sammelt sich sofort eine milchige Emulsion, oberhalb der Verschlankung vom Bubbleglas bildet sich auf der Oberfläche eine identische, etwas dünnere Emulsion. Sieht klasse aus, wie zwei Hamburgerbrötchen oben und unten und in der Mitte Gewürzgurken :D Ich glaube ich brauche etwas zu Essen :)



Nachdem Louche (beide) ein sehr dichter, weiß-grünlicher – leicht schlammiger Absinthe im Glas. Wirkt etwas dreckig, aber ein Verte schafft selten ein schönes weiß, ist ja klar.



Er riecht jetzt nach fast nichts. Etwa 1:2 verdünnt. Beide sehr identisch in Sachen Öl auf der Oberfläche und am Glasrand.



Jetzt der verdünnte Geschmack. Meinen Eindruck der „normalen“ Vertes könnt ihr dort nachlesen. Der Oak-Aged gefällt mir besser. Er ist frischer, Anisverliebter und weniger bitter. Leider aber auch hier etwas torfig, erdig. Wenig komplex, aber gut ausbalanciert. Mein Gedanke zum guten Fenchel tendiert jetzt mehr zum Wermuth.



Ich gebe noch etwas Wasser dazu, ca. 1:2,5. Hier gefällt er mir Geschmacklich am besten. Er bleibt cremig, zart. Karamell und Toffee wie beschrieben kann ich als Liebhaber eben dieser leicht erkennen – auf jeden fall „karamelliger“ und zarter als der normale Verte. Ich schätze zwischen meinem Empfinden für „torfig“ und „Toffee“ liegen keine großen Welten. Würde ich in der Einschätzung mitgehen.



All in all gefällt mir der Oak-Aged besser als der normale Verte. Er ist etwas milder, runder und weniger bitter, bei etwas besserer Balance. Leider ist er „solo“ wenig komplex wie ich finde. Erst im direkten Vergleich wird die Vielfalt bzw. Abweichung etwas klarer.



Er schmeckt auch nicht typisch Fassgereift. Meist wird es hier – oh Wunder – etwas holziger, harziger, vielleicht vanilliger, erdiger, reifer, stumpfer… Das ist hier (zum Glück) nicht der Fall. Ich bin immer hin und her gerissen mit diesen Fassgereiften. Ich mag sie sehr gern, wenn es einen direkten (ungereiften) Gegenkandidaten gibt – wie hier.



Hier gefällt er mir besser, meistens ist das nicht der Fall. Der Aufpreis geht in Ordnung, sind beide im unteren-mittleren Preissegment.



Ich empfehle beide Absinthes parallel zu kosten. Falls es nur einer wird, der Oak-Aged. Für Anfänger und Experten gleichermaßen geeignet. Wenngleich man hier nichts Außergewöhnliches erwarten darf. Experten dann bitte direkt beide Varianten. Vielleicht auch gleich die Dritte :)

"This is absinthe" is how my wife succinctly described this drink. It is an extremely well composed and balanced absinthe, that will put your taste buds back on track if you ever lose sight of what absinthe is supposed to taste like. It represents the ideal traditional flavors that you would expect and desire out of a French Verte, with the proper amount of complexity from auxiliary herbs without any unnecessary distractions, an absolute classic. Certainly one of my new favorites.

1859: The distillery was founded by Xavier Devoille. His son, Paul Devoille, was very dedicated to developing the distillery, and worked hard on its growth. This is why up until this day, the distillery is named after him. Paul Devoille was a very important person in Fougerolles, he held the position of the major for many years.

1986: Due to the bad financial position the distillery was in, Jaques Veillet, the new owner of the distillery, decided to sell it to an experienced business man, who already invested into a couple of other distilleries inside and outside on France. René Miscault bought the distillery, and made some rapid administrational changes. He also expanded their product range, and opened the distillery for visitors to the public. These measures may seem drastic, however, they saved the distillery in the end. Today, Hugues Miscault, the son of René Miscault, runs the distillery.

 

Paul Devoille's Absinthe:

Their probably most popular absinthes, apart from the Libertines, and the Enigma Verte and Enigma Blanche. Absinthe Soixante-Cinq is a pretty interesting absinthe as well, with a quite spicy smell combined with a fruityness from the wine-alcohol base. Certainly, there are a lot of other spirits produced at Paul Devoille, such as eau-de-vies and liqueurs. From plum to strawberry, you can find nearly all of the common flavours.
