Justifiée & Ancienne bears Martin Zufanek's unmistakable hallmark.

This absinthe is based on a wine spirit that was distilled in 2013 and stored in oak barrels since then. Martin added the finest herbs to this wine base and put the distilled absinthe back into a French oak barrel. The whole batch of Justifiée & Ancienne has been aged together in a single barrel.

Justifiée & Ancienne is not a rebranded Absinthe L'Ancienne, even though there are some similarities: the same wine spirit, selected herbs and the aging in a barrel. However, Martin used more herbs in the recipe for Justifiée & Ancienne, giving it a softer, more floral and herbal taste.

The name Justifée & Ancienne is a homage to the band The KLF, British house and rave pioneers. The group was originally known as The Justified Ancients of Mu Mu, and in 1991 they released the song Justified and Ancient, featuring country singer Tammy Wynette, and with what has to be one of the most insanely memorable music videos of all time.
Martin has been obsessed with this crazy band for decades; naming an absinthe after their work was clearly destiny.

Tasting notes:

Justifiée & Ancienne is a soft and round absinthe that reminds us of a vintage absinthe. It has a lovely brown color, just like cognac. The aroma is room-filling, before the water has even been added. The wine base and the barrel-aging are clearly visible in this absinthe.

Zufanek, Czech Republic

The Zufanek Distillery was founded in 2000. At first, the family focused on the production of honey and fruit based liqueurs. In 2008, Martin started to distill absinthe and the St. Antoine was the first one of this distillery. Shortly after the launch of St. Antoine, Martin created La Grenouille, and absinthe Mead Base.

What's special about this distillery is that all fruit used for the production of their spirits are cultivated on their own orchards. Most of the herbs used for the absinthes are also grown by the Zufanek family themselves. This is why it's not surprising that the distillery received an organic certificate. Their mission is: 100% natural products.

Impressive absinthe! The wine base makes this very special. Has a lot of vintage absinthe charm with a touch of youthfulness and vigour. Nice to see how this will develop with time, so better try to keep some bottles behind locked doors for some years...
