La Maison Fontaine Verte is masterfully refined using an array of natural herbs including the world-renowned Pontarlier-grown Grande Absinthe. In combination with the natural herbal coloration this creates a classic floral Verte with rich herbal and peppery notes. Connoisseurs believe that the perfect serve is to drip 3 measures of chilled water from an absinthe fountain over 1 measure of Fontaine Verte. This creates a stimulating, refreshing drink with a vintage green louche. Some prefer a more intense flavour and sip it neat or pour it over ice. Fontaine Verte is also a wonderfully versatile spirit that can be mixed into an array of sublime cocktails.

Did you know?

Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century.

We  work exclusively with Jean-Francois Bourdy to occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.

Serving Suggestion

In order to allow the wine to breathe and develop its full bouquet, we recommend opening the bottle two to three hours before consuming. This subtle wine is best enjoyed slightly chilled, at a temperature of between 13 and 15° Celsius. Vin de Paille is typically served to accompany dessert, and can be saved and let to age for over one hundred years! This special wine from Jean Bourdy exemplifies a remarkable balance between honey, candied exotic fruits and acidic flavors.

Heute möchte ich den Absinthe La Maison Fontaine VERTE rezensieren. Den Blanche hatte ich bereits rezensiert, ist aber schon lange her. Leider wird mir aus der Erinnerung der Vergleich schwer fallen.

Die Flasche ist auch hier sehr sehr schön, elegant und schlicht. Das auf dem Bild sichtbare „Etikett“ ist direkt auf die Flasche gedruckt, also kein Papier. Sieht wirklich nett aus. „Hinten“ prangt dann ein großer Aufkleber mit Barcode etc. Stör den Stil aber wenig.

Der Verschluss ist ein Korkstopfverschluss, also ist wieder zu verwenden. Meine Abneigung gegen Kork wird auch hier Rechnung getragen, ich habe erstmal den Hals von Korkresten nach Öffnung befreien müssen.

Die Farbe stimmt mit dem Bild auf der Webseite überein. Wirkt fast schon etwas künstlich, da das grün schon in Richtung gelb tendiert und dadurch etwas „Neon“ wird.

Pur riecht er nach einem guten Wein, etwas mehr nach Alkohol als ich mit 55% erwartet hätte.

Pur kann man ihn trinken, schmeckt sehr wohlwollend fruchtig, leicht zitronig und mittel bitter. Der frische Anis kommt gegen Ende gut durch, es gewinnt im Nachgeschmack aber die bittere Note.

Ich verdünne 1:1, empfohlen wird auf der Flasche 1:3. Das mach ich auch noch.

Es setzt ein schneller, fast unruhiger Louche ein. Schöne ölige Schlieren durchsetzen den Tropfen im Bubbleglas. An der Oberfläche sieht man feine Ölschlieren tanzen. Wirklich sehr nett. Es bleibt ein noch sehr grüner, dichter, milchiger Nebel zurück. So stell ich mir das vor, ein „Norm-Louche“.

Er riecht verdünnt unterschwellig nach Süßholz, fruchtig und wenig nach Alkohol. Ein leichter Melissen und Kamillenhauch vermag ich zu verzeichnen.

Geschmacklich jetzt natürlich besser als pur. Er entfaltet – nur spürbarer, in der selben Reihenfolge seine Zutaten. Zuerst deutlich Fenchel, dann Wermut mit der Bitterness und kurz nach Abschlucken dann ein fröhliches bitzeln auf der Zunge und eine bittere, ansilastige frische im Mund. Nicht mein Favourit, da ich es weniger bitter mag. Aber im Rahmen.

Jetzt die empfohlende 1:3 Mischung. Schmeckt deutlich milder, natürlich, aber schon leicht verwässert. Mehr Wasser sollte man nicht nehmen. Aber eins ist ganbz klar, mir schmeckt er so besser, da kaum etwas bitteres übrig bleibt. Diese tritt stärker in den Hintergrund als der Rest. Jetzt würde ich meinen auch wieder etwas Süßholz zu schmecken, etwas zitroniges. Mehr Fenchel und wie gesagt, weniger Wermut. Leider auch der Ansi etwas zurückgedrängt, aber immer noch deutlich da im Abgang.

All in all hat sein klarer Bruder von mir 4 Sterne bekommen, dieser hier auch. Pi mal Daumen würde ich sagen, dieser hier ist besser – aber für meinen persönlichen Geschmack keine 5 Sterne wert. Dafür fehlt noch etwas Besonders.

Aber sehr gute 4 von 5 Sternen ist ja was. Ich kann ihn klar einen breiten Publikum empfehlen mit dem Hinweis, sich vorsichtig an das gewünschte Mischungsverhältnis heranzutasten.

The world of Absinthe is a new world for me, but I am a so called super taster. Unfortunately I am not so fond of bitter. And I prefer made as natural as possible. I used 1/3 part La Maison Fontaine Verte, and 2/3 parts water and two sugar cubes. This one makes me want to taste more. I hope the absinthe I will drink i the future is as good as this one. Love it!

This was my introduction to the world of Absinthe. Glad I did some research before buying so I managed to steer clear of the faux products and get the real stuff instead. Living in Norway I have to stay below 60% alc/vol (_60% is defined as narcotics by law here) so I'm glad there's some quality products available. And this is one of them.

I had heard good stuff about La Maison Fontaine Blanche so I went for the Verte version for purely aesthetic reasons since I wanted a taste of the real and infamous green fairy.

I'm reviewing this now after I have tasted a few others as well and I can safely say that this holds up to other quality Absinthes, La Maison Fontaine Blanche included.

My first glass was with about 2/3 ice water and one sugar cube. I quickly went away from adding sugar and have not looked back.

An aromatic taste explosion. As it should be.

Emile Pernot, Frankreich

1899 : the young Emile-Ferdinand Pernot, a native of the Fougerolles region, where he had trained as a distiller, joins the Parrot brothers and together they establish "Emile Pernot et Cie" located in Pontarlier. Emile-Ferdinand's son, Emile-Joseph (don't worry, none of their sons were called Emile-Emile even though they loved this first name), a survivor of the World War I trenches, later registers the famous name "Emile Pernot".

 

2009 : The distillery moves from the center of Pontarlier to the magnificent old Cousin Jeune building in La Cluse et Mijoux, at the foot of the Château de Joux, the very same building where the young Emile-Joseph Pernot learnt his trade a century earlier. And you know what? It was a pure coincidence - the building had been a post office and a fire station in the intervening years!

 

Absinthe distillation at Emile Pernot :

The two century-old copper alembics used by Emile Pernot for their absinthe distillations were made by the famous firm of Egrot in the early 1900s. They were especially designed and built for absinthe distillation, and they are the only stills of their kind in operation anywhere in the world. These stills allow the Pernot distillery to produce absinthes of exceptional quality according to methods unchanged for a century.
