The Bovet Le Chat absinthe is a very mellow and well-balanced absinthe. One can consider is a typical, classic Swiss Bleue with strong notes of aniseed and wormwood. Its fairly low abv. gives the Bovet Le Chat absinthe a very refreshing taste and therefore makes it the perfect absinthe for fans of licorice!

Absinthe Le Chat is made like any other of the absinthe brands by the Bovet family distillery – traditional, handmade, and after fine and partially historic absinthe recipes. About half of the herbs and plants used to produce this absinthe are cultivated in the family‘s own garden. The drying and macerating of the harvested herbs is almost always done by just one single person. The art of distilling and the secret recipes for the Bovet absinthes are always passed onto the next generation who takes over to run the distillery, which ensures a distinct and consistent quality from batch to batch.

Willy Bovet, founder of the Bovet family distillery, was a former watchmaker from the Val-de-Travers, where absinthe was invented. After absinthe was declared legal again in 2005, Mr Bovet and two other absinthe distillers founded the collective "La Valote" distillery. They split up later and separated into three individual, family-run distilleries.
The Bovet distillery is located in Môtiers, home to many distilleries before the absinthe prohibition in 1910. To this day, all Bovet absinthes are handmade according to historic recipes and distillation techniques. Starting with the cultivation of herbs, the drying and cutting, maceration and distillation, up until the final coloration step. The passion for absinthe and the skills obtained by the Bovet family that are being passed onto each new generation - this makes these absinthes what one calls a "classic Swiss Bleue": refreshing and strong on aniseed!
Robert Bobillier, a former clandestine absinthe distiller taught Willy Bovet the art of absinthe distilling and herb cultivation. He passed his knowledge onto his daughter Francoise, who runs the distillery since 2018.
