This is a clear, barrel aged absinthe from the Val-de-Travers. It is distilled in very small quantities, and limited to 500 bottles in total. The still is so small, it can only make about 17l per distillation. All the ingredients that can be sourced locally have been especially grown for the Bovet family by farmers in the Val-de-Travers, including grand wormwood, roman wormwood, hyssop, peppermint and lemon balm.
After distillation, the Nostalgie is placed in oak barrels for 2 months, which used to be a common procedure in 1900. The bottle reminds of champagne and has a classic matte-black finish with a transparent line allowing you to see how much of this delicious absinthe is left.

Willy Bovet, founder of the Bovet family distillery, was a former watchmaker from the Val-de-Travers, where absinthe was invented. After absinthe was declared legal again in 2005, Mr Bovet and two other absinthe distillers founded the collective "La Valote" distillery. They split up later and separated into three individual, family-run distilleries.
The Bovet distillery is located in Môtiers, home to many distilleries before the absinthe prohibition in 1910. To this day, all Bovet absinthes are handmade according to historic recipes and distillation techniques. Starting with the cultivation of herbs, the drying and cutting, maceration and distillation, up until the final coloration step. The passion for absinthe and the skills obtained by the Bovet family that are being passed onto each new generation - this makes these absinthes what one calls a "classic Swiss Bleue": refreshing and strong on aniseed!
Robert Bobillier, a former clandestine absinthe distiller taught Willy Bovet the art of absinthe distilling and herb cultivation. He passed his knowledge onto his daughter Francoise, who runs the distillery since 2018.
