Soixante Cinq is elegant and mellow, offering delicate aromas alongside fruity notes from the wine-alcohol base. An absinthe that will please beginners and more experienced absinthe-drinkers.

Soixante Cinq absinthe is produced according to a French recipe from 1899, made exclusively from plants and seeds without any added sugar. Its colour is completely natural, obtained by infusion of different flowers and leaves, including lemon balm.

Unusual among absinthes, in Soixante Cinq all the ingredients are individually distilled with wine-alcohol, then blended and infused together for colouring.

A well-rounded absinthe to enjoy on an evening!

Serving Suggestion

- At first, savour Soixante Cinq with half a piece of sugar. Then add more or less according to your taste. - For one measure of absinthe (3cl), add 2 to 4 measures of iced water.

A well made absinthe with no surprises or weirdness going on. The louche is quite nice and every sip delivers a balanced bouquet of herbs on a fine wine-alcohol base. A pleasue to drink. 1:4 no sugar.

Delicieuse absinthe rafraîchissante. Bon équilibre entre les saveurs herbacees avec une touche de réglisse en finale. Belle robe d'un vert sauvage évoquant les herbes folles de nos jardins. Une dégustation qui s'apprécie dans la tradition française des dégustateurs du 19e siècle

Der Abinsthe Soixante Cinq, was soll ich nur sagen… Gekauft nach Optik enttäuscht mich die Darstellung auf der Webseite mal wieder, leider. Wie schon beim Adnams Rouge trifft die Darstellung die Realität nur „in etwa“. Ich habe hier einen dunklen, fast braunen oder bernsteinfarbenen Absinth erwartet. Es ist definitiv sehr dunkelgrün, aber eben nicht wie erwartet oder dargestellt. Hätte ich ihn mir als Wandfarbe bestellt, ginge ehr zurück. Was „Herbstgold“ sein soll weiß ich auch nicht, aber auf jeden Fall nicht die Farbe des Absinthes.
Nun gut, dafür kann der gute (?) Schluck ja aber nichts. Wieder einer aus der Hand von Paul Devoille ist die Aufmachung doch sehr nett, wirkt etwas historisch und ist es eben auch. Aber ohne sich zu prominent auf „früher“ zu stützen. Pur riecht er sehr sehr scharf, die „soixante-cinq riecht man förmlich. Pur ist er schlicht ungenießbar. Macht man ja aber auch selten.
Der Louche ist langsam und dezent und wird am Ende nicht sehr dicht. Er bleibt blass grün durchsichtig. Für Kenner einmal etwas Anderes, für Anfänger vielleicht etwas unüblich und enttäuschend. Der Showeffekt fehlt eben.
Jetzt riecht er etwas grasig, moosig, nach frischen Wald. Nicht etwas pfad oder erdig. Aber auch nicht fruchtig. Sehr natürlich eben.
Geschmacklich eine Überraschung. Zucker ist meiner Meinung nach nicht notwendig. Laut Beschreibung sind „Blätter, Blumen und Samen“ beigefügt. Das ist denke ich nicht die Regel, schmeckt aber gut und ich möchte behaupten man schmeckt hier ein gutes Potpourri (Laut Wiki „ein Gefäß mit wohlriechenden Pflanzenteilen“). Geschmacklich wirklich breit gefächert, es fällt mir aber schwer zu sagen was hier neben der Dreifaltigkeit noch dabei ist.
Insgesamt auf jeden Fall kaum bitter, zart süß und eine nette, unaufdringliche Note Anis.
Ich gebe hier 4 Sterne und empfehle die „65“ gern an Liebhaber und Anfänger weiter.

Amazing anise aroma to this bottle! This is one of the most unique absinthes I've tried. Hints of fruit with that classic Devoille wormwood taste! Very pleasant wine base gives this stuff a soothing mouth feel. Will definitely buy this again. Sante!

Another one that has more or less become my standard absinthe. It's definitely (!) worth its price as one of the cheaper brands (cheap in price but a no bogus absinthe at all or "cheap" in taste). Goes pretty well diluted for me.

This was a great discovery in my last shipment. The dark green color in the bottle was a great initial clue as to the contents as they louched. I lean towards a darker bottle green coloration in my vertes. Slow build up in color then led to a brilliant jade glass of liquid green clouds. A bit of a bitter bite - not too much - but enough to signal the presence of Artemesia Absinthium and to let say "hello" to your mouth. Love this Absinthe at this price point. Glad I tried it.

First time I've tried this one. I was very impressed with how thick the louche was after three parts of spring water and ice. After a few drinks, I tried it with the Absinthe Cami Songe Vert. I was not disappointed!! Will reorder again. Thanks!

Une absinthe qui mise sur un goût original, un étonnant petit goût de pain d'épice. C'est très bon, et comme toujours chez Devoillle, un alcool de vin qui devrait lui permettre de bien vieillir. C'est juré je vais m'en prendre une autre pour la mettre à la cave, suffit juste de pas craquer pour pas l'ouvrir trop tôt.

Pour ma part, j'ai été vraiment séduit par cette absinthe. Dès l'ouverture de la bouteille, le parfum subtil et équilibré m'a conquis. Le niveau baissant, j'ai pu constater que l'oxygénation avait rapidement opéré des merveilles. Cette absinthe ne peut que se bonifier avec l'âge. Indéniablement, la merveilleuse base d'alcool de vin utilisée par la distillerie Paul Devoille n'est pas étrangère à cette réussite, mais pas seulement. Cette remarquable absinthe (de mon point de vue) n'a pas à rechercher de complexité particulière, se suffisant à elle-même. Je l'ai trouvée douce, bien équilibrée, légèrement confisée, envoutante. Je manque probablement d'expérience par rapport à d'autres artémisophiles (seulement une dizaine d'absinthes testées) mais celle-ci compte parmi les meilleures. Si tous les goûts sont dans la nature, et c'est tant mieux, les miens la place devant La Verte de Fougerolle, et même devant la Papillon (bon produit mais la badiane me dérange), par exemple. Bref c'est un plaisir, de surcroit abordable, que vous ne devriez pas bouder. De toute façon, vous ne serez pas déçus.

Excellent produite. Une absinthe typique, traditionnelle, rafraichissante et avec un taux d'alcool qui équilire parfaitement l'ensemble. Par ailleurs un rapport qualité prix nikel. Vraiment à avoir en permanence dans son bar.

A very good recent Absinthe from Paul Devoille. Not one of the top-tier offerings, but still highly drinkable, and decent representation of a modern, well-made Absinthe. Excellent louching at 1-3 parts water - with a nicely balanced wormwood to anise ratio. I would most certainly buy this particular Absinthe again: for it's quintessential and authentic Absinthe profile, but also for it's relatively reasonable quality-to-value cost.

1859: The distillery was founded by Xavier Devoille. His son, Paul Devoille, was very dedicated to developing the distillery, and worked hard on its growth. This is why up until this day, the distillery is named after him. Paul Devoille was a very important person in Fougerolles, he held the position of the major for many years.

1986: Due to the bad financial position the distillery was in, Jaques Veillet, the new owner of the distillery, decided to sell it to an experienced business man, who already invested into a couple of other distilleries inside and outside on France. René Miscault bought the distillery, and made some rapid administrational changes. He also expanded their product range, and opened the distillery for visitors to the public. These measures may seem drastic, however, they saved the distillery in the end. Today, Hugues Miscault, the son of René Miscault, runs the distillery.

 

Paul Devoille's Absinthe:

Their probably most popular absinthes, apart from the Libertines, and the Enigma Verte and Enigma Blanche. Absinthe Soixante-Cinq is a pretty interesting absinthe as well, with a quite spicy smell combined with a fruityness from the wine-alcohol base. Certainly, there are a lot of other spirits produced at Paul Devoille, such as eau-de-vies and liqueurs. From plum to strawberry, you can find nearly all of the common flavours.
