Dale DeGroff and Ted A. Breaux created the Pimento Aromatic Bitters together. The initiative for this project probably came from DeGroff, who found no substitute for a spice called Pimento Dram by the liqueur distillery of J. Wray & Nephew, which was only imported to the U.S. until 1980 and is manufactured at all any more.
The nature of pimento-berry is accordingly very spicy and diverse in flavor. Based on individual tastes and preferences, this bitter can refine any sort of cocktail, and King Cocktail DeGroff recommends a dash of these bitters with gin, grappa, and whiskey
