Un Emile 68 is a lightly bitter absinthe produced in a traditional distillery. It will be a perfect initiation. This balanced green absinthe puts forward the tastes of wormwood and green anise. Its colour is obtained by maceration of Petite wormwood, hyssop, Melissa and other plants kept secret. No artificial substance is used, and neither star anise nor sugar is part of the recipe. An ideal way to discover absinthe!

Serving Suggestion

- At first, savour Un Emile 68 with half a piece of sugar. Then add more or less according to your taste.

- For one measure of absinthe (3cl), add 2 to 5 measure of fresh water.

It is a misconception that this is a beginners absinthe. The term "beginners absinthe" is in general of little sense. An absinthe is an absinthe. However it is simple and very herbal, giving a good impression of both the typical "Emil Pernot note" along with the Pontarlier wormwood. During time it has undergone changes, but in its current form I find it to be a very good absinthe with a high level of quality/price ration as well. The anise content in the 68% version is limited as with some other absinthes in the Pernot range. Therefore they are very sensitive to the addition of water. In order to enjoy this absinthe at its fullest, I recommend icecold water, a sloow drip and not diluting it too much. If you add water too quickly, it has a tendency to be too sharp and boozy. For some reason the 45% version seems less sensitive, perhaps due to a higher water content.

I believe this absinthe is a alltime classic, and the improvements do that it deserves respect. It is a good start absinthe if you are not that familiar with Emile Pernot.

Un Emile comes in a 45% version too that is very suitable for cocktail bars that want to work with the clean sharp, notes from this absinthe. It makes a tremendeous "green beast" (1 part lime, 1 part simple syrup, 1 part absinthe, 3 parts of water, cucumber lumbs, ice and shake well)

Although a little weak in the wormwood profile, dollar for dollar, euro for euro a great absinthe that will not blow your budget and you will want to keep around.

Une excellente absinthe, peu anisée, grande absinthe très présente, épicée, légèrement urticante... et très persistante... comme on l'aime ! Très bon produit de chez Pernot, à conseiller.

Good product for a novice who wants to try real absinthe. Produced in according to the traditional methods, this absinthe has a pale natural yellow-green colour; louche is pale too.
Wormwood and anise are the dominant flavours.
Nothing of outstanding; antique charm.

Absinthe moyenne où la grande absinthe est mise à l'honneur ( et pour cause, on ne sent que ça...). Un trouble extrêment lent et bien pâlo. En iniciation exclusivement.

Emile Pernot, Frankreich

1899 : the young Emile-Ferdinand Pernot, a native of the Fougerolles region, where he had trained as a distiller, joins the Parrot brothers and together they establish "Emile Pernot et Cie" located in Pontarlier. Emile-Ferdinand's son, Emile-Joseph (don't worry, none of their sons were called Emile-Emile even though they loved this first name), a survivor of the World War I trenches, later registers the famous name "Emile Pernot".

 

2009 : The distillery moves from the center of Pontarlier to the magnificent old Cousin Jeune building in La Cluse et Mijoux, at the foot of the Château de Joux, the very same building where the young Emile-Joseph Pernot learnt his trade a century earlier. And you know what? It was a pure coincidence - the building had been a post office and a fire station in the intervening years!

 

Absinthe distillation at Emile Pernot :

The two century-old copper alembics used by Emile Pernot for their absinthe distillations were made by the famous firm of Egrot in the early 1900s. They were especially designed and built for absinthe distillation, and they are the only stills of their kind in operation anywhere in the world. These stills allow the Pernot distillery to produce absinthes of exceptional quality according to methods unchanged for a century.
