Aged for 12 years in casks, this Calvados is somewhat lighter and spicier.
Aromas of baked apple and apple pie in the nose and on the gums – yummy! – meet the freshness of the fruit and the ripe aged tone of this Calvados in perfect balance.
At 12 years, the cask has certainly nurtured the apple flavor, but not completely over-powered it, so that the interplay of aromas in this Calvados remains intense and extensive.
This is an exceptional Digestif at 40% ABV, best served in a snifter glass at room temperature.

Exclusively produced on the Camut estate are high-stemmed trees as well as 25 purely organic and mainly bittersweet types of apples, and without insecticide or pesticide.
The yearly harvest on the Camut estate includes 100 and 300 tons of fruit, all picked and mashed by hand. The mash is juiced in a pneumatic press to about 65% concentration and the juice is then left to ferment into cider.
This is aged for 10 to 11 months, before mash of the September harvest of the following year are distilled in two alembics to 63% concentration.
One of these two alembic mils was built by Adrien Camut himself. Adrien Camut's Calvados is consistently considered as the best of the best.

Founded at the beginning of the nineteenth century by Adrien Camut, the producer is now run by his nephews Jean-Gabriel and Emmanuel. In the unique paradise that is the House of Camut, where especially old Calvados is aged, you can in fact find the world's oldest Calvados reserves.
The Camuts don't use pears at all and also pay close attention to the natural integrity and authenticity of their Calvados – it's certainly not sweetened nor colored nor filtered.
