This Cocktail Bitters only recently appeared on the market. However, it was already popular among Cocktail Bitters. The two reasons for this are Dale DeGroff and Ted. A. Breaux. Pimento Aromatic Bitters is also sold under the name DD's Pimento Aromatic Bitters and Double-D Bitters. Due to the nature of allspice berry, this bitters is very spicy in its taste and versatility. Depending on personal preferences, it can refine all kinds of cocktails. King Cocktail DeGroff recommends gin, grappa and whiskey to taste with a dash of his bitters. Dale DeGroff is King Cocktail. Probably no other cocktail expert, apart from Jerry Thomas, the co-founder of professional bartending, had as much influence into the upscale bar culture as Dale DeGroff. In 1969, he went to New York to follow his dream to become an actor. At first, he reanimated the Cocktail itself, by digging up the buried roots of the cocktail culture due to the prohibition in the US, and developed those in new directions. He started off as a bartender, and slowly became an expert of mixology, followed by being the author of two books for the guild, co-founder of the Museum of the American Cocktail, and made his way to become a consultant and teacher. He was even able to pursue his dream to become an actor, through his own show "ON THE TOWN". Ted A. Breaux is nearly as accredited as Dale DeGroff. Through his studies of historic sources and through own experiments, he became a true expert of absinthe, which has a similarly rich history as the Cocktail (see history of absinthe). He found, that the alleged concentration of thujone in absinthe, that still today is often discredited and criminalized, never actually was that high that it could harm the human brain. Ted distills excellent spirits (absinthe and others) in the traditional Combier distillery in Saumur, France. Production Dale DeGroff and Ted A. Breaux created the Pimento Aromatic Bitters together. The initiative for this project probably came from DeGroff, who found no substitute for a spice called Pimento Dram by the liqueur distillery of J. Wray & Nephew, which was only imported to the U.S. until 1980 and is manufactured at all any more. The alcohol content of Pimento Aromatic Bitters is 45% vol. Ingredients include the eponymous allspice berries, also known as allspice, anise, herbs and tropical and mediterranean spices. Tasting suggests that even dried orange peel, ginger, nutmeg, cinnamon, cloves, curry masala and mint could be contained, and that it is distilled with Jamaican rum. All essences are obtained by the manufacturer directly by infusion and distillation of the ingredients. There are no artificial oils, flavoring or coloring agents used. Use Pimento Aromatic Bitters is also marketed under the name DD's Pimento Aromatic Bitters and Double-D Bitters. The nature of allspice berry accordingly it is very spicy in taste and versatility. Depending on personal preferences, it can refine all kinds of cocktails, King Cocktail DeGroff himself recommends gin, grappa and whiskey to taste with a dash of his bitters.

Jade Liqueurs & Combier, France

1834 :

Jean-Baptiste Combier, 25, opens the Combier-Destre candy store in Saumur together with his brother Claude. Thanks to an alembic installed in the back shop, he distils some liqueurs to fill his candies and chocolates with.

 

1848 :

J ean-Baptiste buys more alembics and establishes the Combier distillery on the rue Beaurepaire, where it still is located today. This is the starting point of a booming business, Combier now sells its liqueurs all over the world.

 

1861 :

Jean-Baptiste Combier's son James, only 19 years old, learns the art of distillation before traveling to England, Algeria, Italy, Greece and Egypt, from where he brings new essences and herbs for Combier Liqueurs.

 

Absinthe distillation at Combier :

Combier owns its own fields of 2 wormwood cultivars, harvested by hand and traditionally dried in an attic. There are 10 alembics from the 19th century in the distilling room, including 8 from Egrot (the famous maker of Pernod Fils alembics at the time).
