In 1798, Daniel-Henri Dubied founded the first absinthe distillery in Couvet, together with his son Marcellin and with the help of Henri-Louis Pernod. He called it Dubied Père et Fils and he produced the very first commercially available absinthe there.

At the end of 2017, and then at the beginning of 2018, two bottles of the first absinthe produced by Dubied Père et Fils were discovered. The first one, unearthed by Marc Thuillier, went to the absinthe museum in Môtiers where it is now on display. The 2nd bottle, found by a known absintheur, was opened and samples were sent to absinthe lovers all over the world. Martin Zufanek was among the happy recipients of one of the samples and he used it as an inspiration to create the Dubied – Zufanek absinthe. This means that this absinthe is a reproduction of the oldest known absinthe recipe in the world.

220 years of history can now be tasted in 220 liters of absinthe.

Martin Zufanek uses a neutral alcohol base for this absinthe, the same base that was mentioned in the original, handwritten notes of Fritz Duval, successor of Dubied.

The coloration process gives this absinthe its special character. This complex process is different to the process of coloring absinthes nowadays and the coloring herbs give the Dubied – Zufanek absinthe different flavors and a darker color. This is why the absinthe looks like a preban absinthe.

Dubied-Zufanek absinthe is definitely a very special absinthe: creamy, thick, complex and aged in oak barrels for a few months.

The Zufanek Distillery was founded in 2000. At first, the family focused on the production of honey and fruit based liqueurs. In 2008, Martin started to distill absinthe and the St. Antoine was the first one of this distillery. Shortly after the launch of St. Antoine, Martin created La Grenouille, and absinthe Mead Base.

What's special about this distillery is that all fruit used for the production of their spirits are cultivated on their own orchards. Most of the herbs used for the absinthes are also grown by the Zufanek family themselves.

Their mission is: 100% natural products.

Will you be making more? Let me know! I've tried other "modern" absinthes but found them ponderous and unexciting.
