The last version of Justifiée & Ancienne sold out within days. Now a new version is back, and we reckon it’s better than ever.

Martin Zufanek, distiller of Justifiée & Ancienne has used wine spirit from 2013 which has been ageing in oak barrels ever since. The difference between this and the last version is the wormwood: this time the famously aromatic wormwood of Pontarlier, France has been used. You can definitely tell when you drink it. The rest of the recipe has stayed the same.

Justifiée & Ancienne is a unique absinthe with a very creamy feel. The notes of oak are easily recognised and fit in very well with the wine base. The second version is even softer than the first.

Martin recommends drinking this mixed one part absinthe to two parts water.

Over the past few years Martin Zufanek has made a name for himself with his award winning absinthe and gins.

Zufanek, Czech Republic

The Zufanek Distillery was founded in 2000. At first, the family focused on the production of honey and fruit based liqueurs. In 2008, Martin started to distill absinthe and the St. Antoine was the first one of this distillery. Shortly after the launch of St. Antoine, Martin created La Grenouille, and absinthe Mead Base.

What's special about this distillery is that all fruit used for the production of their spirits are cultivated on their own orchards. Most of the herbs used for the absinthes are also grown by the Zufanek family themselves.

Their mission is: 100% natural products.

I love this Absinthe! i'm trying to make this bottle last but I can't keep from enjoying this variety. Very smooth lush feel on the palate. This is one of my favorites!!

This is a truly great modern absinthe that evokes authentic pre-ban, while still being vibrant and fresh. The wine base in theis Absinthe is stunning.

Simply one of the best absinthes around! Beautiful wine base with just 4 main ingredients and 2-3 for colouration. Like a pre-ban absinthe.

Truly amazing absinthe from Martin Zufanek! Such a beautiful and very complex blend of the trinity, plus the Pontarlier wormwood makes this absinthe top notch!

The days of the Czech Republic only producing inferior absinthe are dead. There is no question that Martin Zufanek has smacked one out of the park again, with this revolutionary product. There is no other modern absinthe quite like this one on the market, and other heavy hitters in the small batch industry will have a very difficult time topping this. Stunning job, keep it up.
