The Bovet Le Chat absinthe is a very mellow and well-balanced absinthe. One can consider is a typical, classic Swiss Bleue with strong notes of aniseed and wormwood. Its fairly low abv. gives the Bovet Le Chat absinthe a very refreshing taste and therefore makes it the perfect absinthe for fans of licorice!

La Valote Bovet, Switzerland

Willy Bovet, founder of the Bovet family distillery, was a former watchmaker from the Val-de-Travers, where absinthe was invented. After absinthe was declared legal again in 2005, Mr Bovet and two other absinthe distillers founded the collective “La Valote” distillery. They split up later and separated into three individual, family-run distilleries.

The Bovet distillery is located in Môtiers, home to many distilleries before the absinthe prohibition in 1910. To this day, all Bovet absinthes are handmade according to historic recipes and distillation techniques. Starting with the cultivation of herbs, the drying and cutting, maceration and distillation, up until the final coloration step. The passion for absinthe and the skills obtained by the Bovet family that are being passed onto each new generation – this makes these absinthes what one calls a “classic Swiss Bleue”: refreshing and strong on aniseed!

Robert Bobillier, a former clandestine absinthe distiller taught Willy Bovet the art of absinthe distilling and herb cultivation. He passed his knowledge onto his daughter Francoise, who runs the distillery since 2018.

A first-rate basic blanche with a wonderful wormwood bite. The flavor profile is simple, even among blanches, but very satisfying. It's one of the absinthes I keep around.

I have been a fan of Bovet for some time and this does not disappoint.

My experience is probably less than many here but I have tried around 10 La Bleues from Switzerland. These are among my favorites. You can taste the decades of experience Mr. Bovet brings to each bottle.

I just had a few glasses of this and Grenouillarde this last evening. I could tell very little difference when compared side by side apart from the obvious difference in alcohol content - higher in the Grenouillarde.

The little difference in them meant that I liked them both. Not too bitter but just enough to let you feel the Wormwood. Very similar aromas to each other. Not floral - very earthy. I like the natural terroir in the La Bleues that are sometimes absent in the vertes. Well balanced.

I would love to visit this distillery when I visit later. My visit would be complete if I were to also enjoy a bootlegged version while there.

Between La Valote Martin (Well rounded with strong/aggressive background) and La Valote Fornoni (Mellow and Herbaceous), I can consider this as the best product of La Valote Distillery, from my perspective as this is the 17th absinthe I tried.

Its mellow, well-rounded and the combination between wormwood, fennel and anise is exquisite yet simple, not complicated at all. Its excellent during an evening chat or listening some music at home.
