Willy Bovet, Switzerland

Willy Bovet is a former watchmaker from the Val-de-Travers, the birthplace of absinthe. His distillery is in Môtiers, home to many distilleries before the absinthe prohibition in 1910.

Back before absinthe was legal, the (alleged) clandestine distiller Robert Bobillier, born 1911, wanted to pass on his knowledge to someone younger. Seeing Willy Bovet as his successor, he gave him his absinthe recipe and showed him how to make absinthe. Bovet then became a clandestine distiller himself. Once absinthe was legalised again, he was proud to find out nobody had suspected him!

Each step in the production of his absinthes is based upon old techniques and traditional procedures. This starts with the selection of herbs, followed by the drying and distillation. The distillation takes place using an alembic made by the late Roland Thonney, former maker of stills for clandestine distillers.

Willy Bovet uses 10 different aromatic plants for the production of his absinthes. Among these plants are grand wormwood, lemon balm, hyssop and peppermint. He even grows some of the plants in his own garden or buys them from local farmers.

I have been a fan of Bovet for some time and this does not disappoint.

My experience is probably less than many here but I have tried around 10 La Bleues from Switzerland. These are among my favorites. You can taste the decades of experience Mr. Bovet brings to each bottle.

I just had a few glasses of this and Grenouillarde this last evening. I could tell very little difference when compared side by side apart from the obvious difference in alcohol content - higher in the Grenouillarde.

The little difference in them meant that I liked them both. Not too bitter but just enough to let you feel the Wormwood. Very similar aromas to each other. Not floral - very earthy. I like the natural terroir in the La Bleues that are sometimes absent in the vertes. Well balanced.

I would love to visit this distillery when I visit later. My visit would be complete if I were to also enjoy a bootlegged version while there.

Between La Valote Martin (Well rounded with strong/aggressive background) and La Valote Fornoni (Mellow and Herbaceous), I can consider this as the best product of La Valote Distillery, from my perspective as this is the 17th absinthe I tried.

Its mellow, well-rounded and the combination between wormwood, fennel and anise is exquisite yet simple, not complicated at all. Its excellent during an evening chat or listening some music at home.
