Last year (2018) Martin Zufanek produced a reproduction of the oldest known absinthe recipe in the world with his Absinthe Dubied – Zufanek 1798. This unique absinthe was meant to be a limited edition only. And it was. This new absinthe is not exactly the same.
This is not Dubied.
This is not Dubied Absinthe is produced the same way as the Dubied – Zufanek Absinthe and Martin used the same, coloration technique that give the absinthe a darker color. The main difference is the base alcohol, which Daniel-Henri Dubied didn’t have at his first absinthe distillery in Couvet:
Marc de Champagne.
In 2018, Martin Zufanek bought grape pomace of Chardonnay, blanc de blancs and used it to distill Marc de Champagne with a very fruity taste of ripe grapes. Exactly this Marc the Champagne forms the basis for the This is not Dubied Absinthe.
Only 800 bottles have been produced!
This is not Dubied Absinthe: like Dubied Absinthe, just different.
Background of the creation of Dubied – Zufanek Absinthe:In 1798, Daniel-Henri Dubied founded the first absinthe distillery in Couvet, together with his son Marcellin and with the help of Henri-Louis Pernod. He called it Dubied Père et Fils and he produced the very first commercially available absinthe there.
At the end of 2017, and then at the beginning of 2018, two bottles of the first absinthe produced by Dubied Père et Fils were discovered.
The first one, unearthed by Marc Thuillier, went to the absinthe museum in Môtiers where it is now on display. The 2nd bottle, found by a known absintheur, was opened and samples were sent to absinthe lovers all over the world. Martin Zufanek was among the happy recipients of one of the samples and he used it as an inspiration to create the
Dubied – Zufanek absinthe. This means that this absinthe is a
reproduction of the oldest known absinthe recipe in the world.
