Absinthe Verte IIIe République is named after the period from which the recipe came. A replica of Absinthe Abel Bresson, a Belle Époque brand.

The process and ingredients follow notes handwritten by the master distiller 100 years ago. It isn't possible to know precisely how the original absinthe tasted back then, nobody alive today has tasted vintage Absinthe Abel Bresson, but the Verte IIIe République is certainly a success with grand wormwood, fennel and anise in perfect balance, with a bouquet suggesting fresh herbs and lemon balm while remaining pleasantly delicate, and achieving a beautifully perfect louche.

Bourbonnaise Distillery, France

The Absintherie Bourbonnaise distillery opened its doors on May 17, 2011, just after the absinthe ban in France was lifted. The owner of the distillery mainly wanted to revive authentic absinthe recipes, and offer contract distillation to client's own recipes. Absintherie Bourbonnaise was established by absintheur Phil Fumoux who, before becoming a distiller, used to collect and sell absinthe antiques. He created the ‘Frenchman' range of replica absinthe accessories. Due to the interesting scheme of contact-distilling, is is no surpise that this distillery carries a very broad range of absinthes – from absinthes made of historic French recipes, to modern, new absinthes using unique and new herbs, such as bison grass – the Bourbonnaise distillery covers it all.

This is an amazing absinthe! I knew as soon as I opened the bottle and caught the aroma that it was going to be something special.

I'm just starting out and have only tried a dozen absinthes or so (with the help of your websites' nice sampler kits), and this is by far one of my favorites. The aroma is like a fresh bouquet of spring flowers with a hint of sweetness. And the smell gets richer and fuller as you drip the cold water in, causing a nice milky yellowish louche that you really have to gently coax out. She's a shy one :)

And the taste was almost divine. A wonderful smooth arrangement of flavors, perfectly balanced, no one flavor drowning out the other, all wrapped in a silky minty wormwoody finish. Truly crisp and refreshing too, with almost no alcohol bite. Here are the feminine and floral qualities I've been hearing about as I've been learning about absinthe. I feel you can't go wrong with this one. I can't wait to try the Boggy and the Napoleon too!
