In France, Fougerolles is known as the capital of kirsch, and with good reason: they simply make outstandingly good cherry eau de vie.

Devoille’s kirsch is made according to traditional methods, passed down from one generation to the next. The sweet cherries used are fermented for a few weeks after harvest, and then distilled once.

Kirsch in the Fougerolles region goes back a long way – to 1680 at least. In 1820 the first large kirsch eau de vie distillery opened, and in the present day the town harvests 500 tonnes of cherries annually, most of them ending up in kirsch.

In 2010 the term Kirsch de Fougerolles was given AOC (Appelation d’Origine Contrôlée) controlled origin status, 41 years after it was first applied for. This has the aim of protecting the quality of kirsch produced in the town, compared to kirsch from other regions. The AOC lays down strict rules about the source of the cherries and where the finished eau de vie may be aged – in around only 10 towns. The unique microclimate of the area is perfect for growing cherries. Kirsch de Fougerolles is the first stone-fruit brandy to gain AOC status, and the 4th fruit brandy to achieve it, after Calvados (made from apples and pears), Cognac and Armagnac (both made from grapes).

The AOC rules state that the finished kirsch has to be at least 45% alcohol, and may only be distilled once. Only copper pot stills are allowed, and no modern rectification column stills are to be used.

Kirsch de Fougerolles is sold in a unique type of bottle, modelled on surviving examples of eau de vie bottles from 18th century Fougerolles.

Devoille Kirsch de Fougerolles has an intensive aromatic flavour of ripe cherries. The overall effect is harmonious. The finish has a light note of marzipan.

Paul Devoille, France

1859:

The distillery was founded by Xavier Devoille. His son, Paul Devoille, was very dedicated to developing the distillery, and worked hard on its growth. This is why up until this day, the distillery is named after him. Paul Devoille was a very important person in Fougerolles, he held the position of the major for many years.

1986:

Due to the bad financial position the distillery was in, Jaques Veillet, the new owner of the distillery, decided to sell it to an experienced business man, who already invested into a couple of other distilleries inside and outside on France. René Miscault bought the distillery, and made some rapid administrational changes. He also expanded their product range, and opened the distillery for visitors to the public. These measures may seem drastic, however, they saved the distillery in the end. Today, Hugues Miscault, the son of René Miscault, runs the distillery.


Paul Devoille's Absinthe:


Their probably most popular absinthes, apart from the Libertines, and the Enigma Verte and Enigma Blanche. Absinthe Soixante-Cinq is a pretty interesting absinthe as well, with a quite spicy smell combined with a fruityness from the wine-alcohol base. Certainly, there are a lot of other spirits produced at Paul Devoille, such as eau-de-vies and liqueurs. From plum to strawberry, you can find nearly all of the common flavours.

Have normally tried to buy from supplier direct was impossible they do not have the organization to supply. This is the very best Kirsch ever. So very please with Absinthes great delivery great company to deal with a 5 star company.
