Sometimes magic happens by accident. While Bittermens was first working on the recipe for the Amère Nouvelle, they had a bit of a slip up on one of their early prototypes. Basically, due to a mistake with a decimal point, they added ten times too much cinnamon.
The interesting thing is that it worked. It wasn't a bitter orange and gentian liqueur anymore like the Amère Nouvelle was designed to be, but it was pretty good nonetheless. They thought that it would work well in winter cocktails or as a mixer in mulled wine and so the name 'Hiver Amer' emerged – the Winter Bitter.
However, it was only when the Tiki bartenders started to play with the Hiver Amer that Bittermens saw the real power of their great mistake. It had many of the qualities of a cinnamon bark syrup but more bitter complexity and less sugar... and combined with Bittermens' Citron Sauvage, it made a particularly interesting Don's Mix style liqueur.
Bittermens' Hiver Amer comes in a 375ml cork-topped bottle with an alcohol content of 30% ABV.

1 oz Louis Royer Force 53 VSOP Cognac
1 oz Rye Whisky
1 oz Sweet Vermouth
1/4 oz Bittermens Hiver Amer
2 dashes Angostura
6 drops Bittermens Orange Cream Citrate
6 drops Bittermens Xocolatl Mole Bitters
Method: Stir and serve up in a rocks glass or coupe. Orange twist optional.
Avery and Janet Glasser established the company in 2007, initially to market and distribute their Xocolatl Mole Bitters.
But the assortment soon grew as well as the demand. Today, Bittermens is the biggest bitter producer in the USA and has enjoyed the largest portion of the Bitters Boom.
Bittermens Bitters are produced in Louisiana using traditional hand-crafted methods. That means that the mixture of high alcohol-percentage macerate is mixed with carefully chosen plant material to produce the resulting bitters. This raw material carries in most cases a Bio seal of approval, or is simply gathered from the wild. Bittermens Bitters are also not sweetened by any pre-processed ingredients or colored with artificial colorings. Special mention should be given to the pipette-style bottle-top which makes for easy usage. Similar to Bob’s Bitters this special bottle-top significantly eases dosage.
