Mezcal

Mezcal (also written as Mescal or Meskal) is a Mexican spirit. It's produced from the flesh of various sorts of agaves which is first braised, and then distilled. What we're talking about here is a “mestizo” drink, in other words a concoction that exists thanks to both European distilling traditions as well as the indigenous, local Mexican traditional methods of distilling spirits.

Agaves have been used by indigenous populations for centuries to produce clothing, shoes, construction materials, paper, and tools. Agaves were also an important ingredient in the local diet and were used to produce Pulque – an alcoholic beverage consisting of fermented agave juice. Consuming the juice was heavily associated with religious rituals and was enjoyed exclusively by the wealthy upper classes. The agave plant was seen as a holy product – that the goddess Mayahuel inhabited it. The word “mezcal” originates from the language of the Aztecs, Nahuatl, and means “cooked agave”: Mezcalli comes from metl, meaning agave, and ixcalli, cooked.

Historically, the term “mezcal” was used for all spirits that were produced from agave. Only in 1994 was the term restricted to spirits produced according to certain regulations.
