Del Maguey Single Village Mezcal Wild Jabalí is a very rare mezcal made from 100% wild Jabalí agave plants. It is produced by master mezcalero Don Rogelio Martinez Cruz.
Jabalí can be translated to boar – the name refers to the pointed leaves of the agave that are reminiscent of the teeth of a wild boar. Wild Jabalí only grows in crevices or cliffs, and is a challenging plant to distill. After the harvest the piñas are roasted traditionally in earth ovens for up to 30 days. Afterwards, they are milled using horse-drawn grindstones.
The aroma is characterized by notes of fresh figs, roasted apples, star anise and a hint of parmesan cheese. The taste shows a nice acidity with herbal notes of tarragon and light sandalwood finish as well as grilled meat.

Del Maguey
Del Maguey, Single Village Mezcal, was founded by Ron Cooper in 1995. This world-renowned artist provided the world with an opportunity to enjoy a 100% biological, artisan mezcal produced exclusively according to traditional practices. The products from Del Maguey respect traditions that extend 400 years into the past. The combination of traditional methods with the various micro-climates of the villages were Del Maguey is produced allow each mezcal product to have its own irreplaceable and unforgettable flavor. Each product from this collection is produced by a palenqueros family in a traditional mezcal-producing village. Each mezcal in the Del Maguey line is named after the village in which it is produced. Del Maguey is in fact the first mezcal brand that has served to unite traditional Mexican mezcal from various locations.
The distillation process takes place in the various palenques (locations of production) in the Oaxaca province, where local cultures and biological practicalities are valued and small producers collaborate on a fair trade basis with local farmers.
The palenqueros use exclusively natural ingredients and engage with traditional procedures that are over 400 years old. Only two ingredients are used: the heart of the agave plant and a maximum of 10% water, added during the fermentation process.
Del Maguey Single Village Mezcal is recognized by the OCIA, the Organic Group Improvement Association, and the USDA, the United States Department of Agriculture. This line of mezcals is the first to receive a certification for 100% organic products.
