Pleasant temperatures are enjoyed in January:  on average it's around -2° Celsius.  A lot of snow falsl all at the same time.  In February the weather has hardly changed, and it rains up to 120 mm per day in some regions!  On the 4th and 6th of March a trough extends from Great Britan down to the Franche-Comté in which it snows between 50 and 70 cm, while warm weather of up to 18° predominates in southern France.  On the 12th of March it is as cold as -19° in northern Germany – and in the Jura the temperatures range between -5 und -8° Celsius.  The temperatures raise dramatically at the end of March, which brings stormy weather and hail.
On the 5th of April it snows again in the Franche-Comté and other bordering regions of France like Alsace.  Up to 5 cm of snow falls.  Until the middle of April, morning frosts are the norm and temperatures are mainly in the negative.  The weather changes drastically at the beginning of May:  it is 25° in most of France.  The weather stays this way for a few days before storms follow.  This sudden warm spell allows more and more heavy storms to come through.  On the 20th of May a very strong wind blows from Great Britain, with speeds of up to 126 kilometers per hour.  The temperatures drop again at the end of May, and it snows in parts of the Jura which are at least 800 meters above sea level, and also in regions in the Alps above 1000 or 1200 meters.
The weather improves at the beginning of June, and the warm temperatures stay through the following month as well.  A heavy storm does however come through on June 25th, causing temperatures to fall distinctly all the way from the Rhône River to the Alps to around 15°, and this also leads to falling hail in some places.

This vintage is somewhat lighter in color than other Côte du Jura Blanc wines.  It offers a pleasant balance between hazelnut and walnut tones on the palate, both of which can also be experienced on the nose.  The grandiose and sustained finale balances the one-of-a-kind flavor experience.

Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century. We work exclusively with Jean-Francois Bourdy to occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.

Serving Suggestion

Firstly, the wine should be opened three to four hours before it is to be consumed, in order to let its diver range of flavors awaken. French connoisseurs recommend decanting the wine as well. It's also important to know that vin jaune should be consumed warmer than a typical white wine. It is best served at between 15° and 17° Celsius and therefore just a bit under room temperature. With which dishes should I serve Vin Jaune? Trout, poultry, smoked fish (like haddock for example) with an accompanying cream sauce, are all wonderfully complimented by Château Chalon. This rare wine is also uniquely suited to complimented Asian or Oriental dishes that contain curry spices. Jean Bourdy recommends consuming Château Chalon with foie gras, scallops, and lobster. We also recommend, however, that you enjoy this special wine on its own – accompanied by some Comté cheese and a few walnuts – in order to let the unique aromas affect you. If you don't have Comté cheese available to you, good substitutes are Gruyère, an old Gouda cheese, or another old, Dutch hard cheese.

The Domaine Jean Bourdy is a very old winery in the French Jura region. Founded in 1579, the family domicile and business looks back at a longstanding history of wine-making. Today, the business is run by the 15th generation of Bourdy relatives. The Bourdy family cultivates their own vineyards and produces exquisite wines only. The business switched to complete bio dynamic cultivation and production and was awarded the Demeter-badge for organic standards in 2010.
