Everyone can remember the summer of 2003:  the so-called “endless summer” brought difficulties not just to humans but also to animals and plant life.  An extended heat wave pervaded the months of June, July and August, and many new temperature and hours-of-sunshine records were registered in many locations.  In general, the temperatures were 1 degree Celsius warmer on average than those recorded in the summer of 1947, the warmest summer on record since the beginning of recording weather data.
Otherwise, it hardly rained during the whole summer.  On certain intercontinental lakes further records were made:  some lakes recorded record-breaking low water surface levels.  This year was characterized by horribly difficult and extensive draughts for vines and wine producers.
The number of hours of sunshine also far exceeded the average.  Combined with the never-ending draught and the higher temperatures, this was an unbearable summer for each and every plant, animal and human who experienced it.
 
This wine offers a complex and diverse experience to the nose, including the typical vin jaune aroma so cherished by connoisseurs.  The flavor is round and powerful without seeming heavy on the palate.  This wine does not necessarily need to be continaully aged – it is already surprisingly mature for its young age.  For this reason, this vintage can be enjoyed now if you are not interested in waiting a few more years to enjoy its wonderful complexity!

Caves Bourdy are the oldest producer in the region, with a direct family line going back to the 16th century. Their cellars contain the oldest collection of vintage Château Chalon and Cotes du Jura in existence, with some wines going back to the 19th and even 18th century.

We work exclusively with Jean-Francois Bourdy to occasionally make limited numbers of these irreplaceable old vintages available to discerning collectors. All wines come direct from Bourdy's cellar to our own, and so are in perfect mint condition.

Serving Suggestion

Firstly, the wine should be opened three to four hours before it is to be consumed, in order to let its diver range of flavors awaken. French connoisseurs recommend decanting the wine as well. It's also important to know that vin jaune should be consumed warmer than a typical white wine. It is best served at between 15° and 17° Celsius and therefore just a bit under room temperature.

With which dishes should I serve Vin Jaune?

Trout, poultry, smoked fish (like haddock for example) with an accompanying cream sauce, are all wonderfully complimented by Château Chalon. This rare wine is also uniquely suited to complimented Asian or Oriental dishes that contain curry spices. Jean Bourdy recommends consuming Château Chalon with foie gras, scallops, and lobster.

We also recommend, however, that you enjoy this special wine on its own – accompanied by some Comté cheese and a few walnuts – in order to let the unique aromas affect you. If you don't have Comté cheese available to you, good substitutes are Gruyère, an old Gouda cheese, or another old, Dutch hard cheese.

The Domaine Jean Bourdy is a very old winery in the French Jura region. Founded in 1579, the family domicile and business looks back at a longstanding history of wine-making. Today, the business is run by the 15th generation of Bourdy relatives. The Bourdy family cultivates their own vineyards and produces exquisite wines only. The business switched to complete bio dynamic cultivation and production and was awarded the Demeter-badge for organic standards in 2010.
